Macarons were brought to France by Catherine de’ Medici. But they were not filled with ganache. They were served plain. At Versailles, the Dalloyau brothers, the Officiers de Bouche, served these macarons to the King starting in 1682. But it wasn’t until the Second Empire that macarons took on the form we know today.
