Aubergine Caviar with Olives

Originally from India, aubergines have long been grown and eaten in Mediterranean countries. Jean-Baptiste de la Quintinie, who managed the royal gardens under Louis XIV, introduced aubergines to the French Court, but it was only at the end of the 19th century that aubergines were regularly referred to in French cookery books.

This aubergine caviar can be enjoyed as an aperitif, as a side dish, or in a salad.
