Quince and Orange Jam

The story goes that Louis XIV was wild about quinces, which he ate after meals. As raw quince pulp was not very pleasant to eat, the King probably ate them as compote or jam.
Louis XIV also enjoyed oranges. He had many orange trees in the Gardens of Versailles, grown in special boxes. Growing these fruit trees in boxes remained a symbol of power for many years for the King and aristocrats, who devoted whole buildings to these trees, to avoid them freezing during the winter months.

This jam can be eaten as a topping for yogurt, on a slice of toast, or in sweet and sour recipes.
