Loquats with Onion

In the 17th century, loquats were both well-known and much loved in winter. Rich in tannins and minerals, they boast numerous medicinal virtues and Louis XIV ate them regularly.

European loquats are the fruit of a hardy tree, common in French forests. They can be harvested at the end of autumn or the start of winter, just after the first frosts. Loquats are very flavoursome, with a bitter, slightly sweet flavour, which can be sharp.

Prepared with onions and spices, this recipe can be eaten as an aperitif, on blinis or toasted bread. It can also be served with a hot dish, or as an accompaniment to meat, as in bygone times.
