This apron is illustrated with a calligraphed menu made up of six to eight dishes and five services that could have been served for the King’s meal.
During the King’s public meal, the many dishes were brought in in successive waves called services. The meal started with soups and a first course, then continued with roasts and salads preceding the entremets, before finishing with fruit.
